Real food on a weekday…
Hey! How’s your week going? Here in Austin, we are getting pummeled with a crazy storm. Juno and I were woken up at 12:30am by some insane thunder and lightening that illuminated my bedroom. Unlike anything I’ve ever seen! Here’s hoping that driving won’t be too difficult! 🙂
It’s been a while since I shared a day of eats, so I thought I would get back on the “what I ate Wednesday” bandwagon.
Because the weather was scary yesterday too (hello tornado watch), I worked from home for the first part of the day. Thought it would be a good opportunity to show what breakfast looks like when I have to make it myself! Normally, it’s a quick egg white scramble with one green veggie + one colorful veggie. Kale and mushrooms for the win. Oh and of course, lots of coffee.
Breakfast part two, 10:30am
I knew I had to get some carbs in my belly after an orangetheory class, so I also made myself a protein mug cake while my eggs were cooking. But honestly, I didn’t even want it after the eggs, so satisfying. I ended up eating it a couple hours into working.
When I finally felt safe driving into the office, I had two lunch meetings (heeehe). The first one I sipped on some peppermint tea, still full from the delicious chocolate mug cake, but by 1:00pm, I was ready for some food: a big ass salad to be exact.
International Women’s Day Happy Hour, 5:30pm <3
Yesterday was international women’s day, so one of my teammates opened her home to all of the women on our team for happy hour! It was a blast, and I was so excited to learn more about each person. Okay, I totally forgot to take a picture of the yummy hummus and cheese I paired with a glass of bubbly, but it was worth it to spend time with the amazing ladies on my team. I did remember to snap a shot of continuing the bubbly mood once I got home!
I discovered Trader Joe’s frozen hatch chiles over the weekend and made some green chile chicken. It was SO good and so easy it feels dishonest to call it a recipe! Regardless, I will share the recipe soon for anyone else who wants easy, healthy meals. To round out the chicken, I sauteed some zucchini and kale and added cheese.
By about 9:00pm, I was cooked. A 4:30am wake-up time is tough! So I made my bedtime snack (nonfat greek yogurt, vanilla extract, 1 teaspoon mini chocolate chips, 2 tablespoons gluten free granola, 1 tablespoon super seed mix, and a little unsweetened coconut), knowing I will lift the next morning, and climbed into bed with a book and some study material. I call it a good day of yummy food!
